February 26th Today we sold out of our Clam Chowder, Fish Chowder and Chicken Rice Soup!!! Tomorrow morning I'll be making Clam Chowder and Chicken Rice Soup to be ready for11:00 AM. My next soup on the hit list is my Thai Shrimp Soup. This soup will be available on Thursday and Friday!! Today I made Chicken Stew and it"s all set to go for tomorrow!! February 20th Tomorrow we'll have Split Pea & Ham Soup, and Sloppy Joe's available tomorrow. Also on our culinary agenda for tomorrow is Fish Chowder!!! The Fish Chowder will be made tomorrow with Haddock!! My favorite fish!! Typically we use cod for the chowder but I want to kick it up a notch with Haddock!! It will be ready tomorrow for 11:00am!!! Today we offered homemade Macaroni and Cheese with Lobster and it quickly became a sellout!!! Our Chicken Stew was a sellout today so that's gone until I make it again on Feb 26th. it was a big beef stew day today and it looks like we have only 3 or 4 bowls left for tomorrow!! Clam boil stew is ready to go for tomorrow!! I made an extra large batch today because we've had customers calling in this week and ordering it by the quart for pickup tomorrow!! The Shrimp Thai Soup was a big hit again today and it will be available tomorrow. Next week we have Pea Soup, Fish Chowder and Sloppy Joe's scheduled so far!! Our Chicken Stew was a big hit today!! We have only 2 bowls left for tomorrow!! Our Shrimp Thai Soup was a hit as well today and we received all positive comments!! Shrimp Thai Soup will be available tomorrow. First thing tomorrow morning I'll be working on Beef Stew!! It will be ready by 11:00 tomorrow. February 12th It seems like I need to review my restaurants notes in more detail before I commit to making dishes on certain dates!! I will not be making fish chowder on Thursday this week because I have Clam Boil Stew (C.B.S.) scheduled for Friday the 15th. I will begin construction of C.B.S. on Thursday and it is possible that it will be ready for lunch on Thursday but it all depends when the steamers arrive Thursday morning. I have moved fish chowder to Wednesday the 20th!! Today I made the Chicken Stew for the second time and thought the flavor of the broth and the tenderness and flavor of the chicken was very good. Definitely an improvement from my first attempt. The Chicken Stew consists of chunks of boneless chicken breasts, onions, celery, carrots, potatoes, thyme, white wine and garlic. Perfect for a day like we had today!! I made the Thai Soup today and it consists of fresh garlic, fresh ginger, lite soy sauce, lime juice, red curry paste, onions, mushrooms, napa cabbage, red bell pepper, ramon noodles and garnished with fresh cilantro and scallions. Shrimp are added and cooked per order!! See you all tomorrow!!
We have had many requests for our Chicken Stew since introducing it on February 1st!!! We also brought back our Thai Shrimp Soup on February 1st and have had many requests for it as well. Tomorrow I will be making both of these dishes due to the amount of requests and I will be making these dishes again on February 26th. Yesterday and today we offered our new Chicken Stew and today it was a sellout!!! Some of our guests that had it on Wednesday came back today to enjoy another bowl!! Thank you all so very much for your support!! Our homemade Sloppy Joe's was a sellout today and will not be available until Feb 12th. We offered our Thai Shrimp Soup today and received all positive comments!! We'll have this soup available tomorrow for as long as it lasts. For breakfast tomorrow we'll have Turkey Crepes which consists of turkey, stuffing and a little gravy rolled up in a crepe and topped with turkey gravy and a side of cranberry sauce. The combination of the turkey mixture and the crepe work excellent together and is very enjoyable!!! This is my second favorite crepe!! Last week I made beef stew and it sold out so fast that I thought about making it again this week and then it hit me!! I never made Chicken Stew!!! Last week we had requests for several new dishes such as: Chicken and Beef Pot Pie, Salmon Pie, French Meat Pie, Stuffed Peppers, Chopped Steaks with Mushroom Gravy, New England Creamed Cod and more. In addition to these requests I've had several conversations with our guests regarding Thai food and I was surprised to find that some of our regular guests are fans of Thai food like myself!! The Thai cuisine is one of my favorites and Hot Chicken Basil is my favorite dish. If I only had the secret ingredients!!! I do have my Thai Shrimp soup that I will have available soon along with a new dish "Spicy Thai Seafood Dinner". Tomorrow we will have the "Chopped Steak with Mushroom Gravy" available for lunch. The chopped steak is similar to a single serving of meatloaf topped with mushroom gravy, however, the chopped steak is very different from our meatloaf. I will be working on another new dish "Curried Crab & Asparagus Bisque". I had this Bisque several times when on vacation for the last 2 years and is seems like a prefect fit for what we do here!! Today we had several sellouts!! Our Marinated Blackened Pork Chops, Kale soup and the Country Fried Steak with Chipotle Gravy were sellouts!! Today I made Clam Boil Stew which is always popular on Fridays and we'll have it available tomorrow for lunch. We'll have plenty of Lobster on Saturday and Sunday for Benedicts, Crepes and Omelets. For lunch tomorrow we'll have our Fried Clam Plate ($18.99) and Seafood Platter ($25.99). The Fried Clams are medium to large belly and are fried in a dry batter. The Seafood Platter consists of Fried Clams, Scallops, Shrimp and Cod with French Fries and topped with several onion rings. On Saturdays we serve breakfast until we close at 2:00pm. Over the past three weeks we've introduced several new dishes for lunch. First, we have our new Marinated Blackened Pork Chops.The marinade consists of chili powder, ancho chili powder, chipotle chili powder, thyme, olive oil, a pinch of salt and several other top secret ingredients!! The pork chops are the thin cut with the bone and are marinated for 24 hours. The pork chops are grilled for 5 minutes and served with applesauce and a choice of potato and vegetable. We have received many positive comments for our blackened pork chops. Last week we introduced our new Country Fried Steak Burger with Chipotle Gravy!!! Over the last two years I've tried twice to create a tasty country fried steak dish using the cube steak that was listed in the recipes and both times were failures!! So I gave up on this idea until two weeks ago. Going through a few cookbooks I saw a simple recipe using ground beef instead of the cube steak. So I made the country fried steak with Chipotle Gravy per recipe and it had no pop!! So we took the country fried steak and made it into a burger. I pan saute the burger to brown on both sides then poached in chicken broth to finish. The revised chipotle gravy consists of browning ground beef, then adding onions and crushed garlic to pan and continue sauteing several minutes. Add chicken broth, chipotle and chili powder and a pinch of salt. We've received all positive comments on our new burger!!! Several weeks ago I finally made something that I've been thinking about for a long time!! I used my Dad's bean recipe and made homemade beans last week!! It was a quick sellout!! I made a new batch this week and it will be a sellout some time tomorrow!! We will continue to offer our blueberry and strawberry stuffed French toast tomorrow and through the weekend. Stuffed French toast has become very popular especially on weekends. Stuffed French toast consists of 2 slices of thick Texas toast. Our special crepe cream is sandwiched between both slices of toast then blueberry or strawberry sauce is drizzled over both slices of toast. Our homemade biscuits and gravy has become very popular and we now offer it everyday!! Today for lunch it was Turkey Club day!! It was one of our most popular sandwiches today!! Yes we use real turkey breast meat here, not deli meat!! Our newest seafood appetizer is mussels. We poach mussels in a butter, olive oil, crushed red pepper, garlic, white wine and lemon juice mixture and serve it with a roll or bread of your choice. We brought back our Portuguese Style Poached Cod several weeks ago and received many positive comments. Cod, chourico, peppers, onions and tomatoes are cooked in mixture of olive oil, butter, minced garlic, crushed red pepper and white wine. Last Friday we offered Salmon for lunch and we received all positive comments. We served blackened, broiled and poached Salmon. We will have Salmon available next Thursday and Friday. I was surprised to see how quickly Salmon sold out last week so if your in the mood for Salmon next week stop by the restaurant or call me and let me know what you'd like for Salmon on either Thursday or Friday. I am so very grateful to our staff and customers alike for the success of Chef Jeff's. You have made a dream a reality!! Thank you so very much. These times are odd "Help Wanted" signs everywhere and none to work!! Our search for a line cook has been no exception. I have worked 22 days in a row and at this stage in my life I do not have the stamina to continue to work every day!! It is with regret that I must close on Mondays, beginning on January 29th!!
